Único 2007 — A complex cycle with a cold spring and an irregular summer. A vintage that demands rigorous selection; finer, more Atlantic wines.
A cool, late-ripening vintage in Ribera, producing an atypically graceful Único. Ruby-garnet with brick tints at the rim. The fully tertiary nose unfolds cherry liqueur, autumn leaves, Russian leather, blond tobacco and a faded floral perfume very typical of the house. A medium-weight palate, without the muscle of the great years but of disarming subtlety: tannins dissolved into silk, an acid vein that keeps it alive and an airy, spicy finish. At its zenith; an Único to understand elegance over power.
More than ten years from harvest to release: six in oak barrels (new and used) and three to four in bottle.
Tinto Fino (Tempranillo) around 95% and Cabernet Sauvignon.
Noble red meats (aged beef, oxtail, big game), black truffle, squab and great aged cheeses.
16–18 °C. Long decanting —at least two hours— for wines with medium ageing; double decanting recommended for older vintages.
